~ Recipe of the month

French Connection will from now on present a monthly recipe using only ingredients which are readily available in Placencia. French Connection's aim is to combine the classic French Methods of cooking with the fantastic Belizean produce that are available. Here is the first recipe for you to try at home! Enjoy!

Paule a Pot

¨ In the mixing bowl combine milk and sour cream, add the bread and allow it to absorb the liquid. Finely chop one of the onions and add this along with the chicken livers, parsley, egg yolks, sausage, salt and pepper. Mix well taking care not to crush the ingredients. Wash the interior of the chicken, stuff it with the mixture and sew the cavity closed using the kitchen string. Press three cloves into each onion.

¨ In a huge pot combine the chicken, onions, celery, root vegetables and carrots. Add the peppercorns and salt to taste. Add water until it just covers the top of the chicken. Bring to a simmer and let it cook over low heat for 2 hours. After the 2 Hours add the Cabbage and Potatoes and cook for an additional 30 min. 

¨ To serve, discard the onions with the cloves in. Transfer the chicken to the serving platter and remove the kitchen string. Arrange the cooked vegetables around the chicken and place the broth in a large soup bowl. Each guest should get a piece of white meat, piece of dark meat, some vegetables and a spoonful of stuffing. Ladle the broth over the plates.
