~ Recipe of the month
French Connection presents a recipe each month, using
only products that are readily available in Placencia. Here is a festive
recipe to get you into the holiday spirit – a traditional Christmas
pudding with an unusual twist.
Christmas Pudding Pancakes
350 g All Purpose Flour
1 tsp of Ground Mixed Spice (nutmeg, ginger, cinnamon)
1 tsp Baking Powder
75 g Raisins
10 g Glazed Cherry (chopped)
20 g Mixed Peel (lime, orange, grapefruit – chopped)
10 g Unsalted Butter
250 ml Milk
3 Eggs
150 g Light Sugar
Pinch of Salt
Butter or Oil for Frying
Syrup:
100 g Raisins
150 ml Water
50 g Light Brown Sugar
Juice of 1 Lime
Generous Glug of Rum (depending on how festive you are feeling)
Sift the flour, adding the spice, raisins and mixed peels. Melt the
butter whisk into the milk with the egg, sugar and a pinch of slat.
Whisk into the flour and mix well. Heat a non stick frying pan and brush
with butter or oil. Add the batter, mixing one spoonful at a time. They
will take approximately 2 to 3 minutes until they need turning. Once the
pancakes are cooked cover with a tea towel to prevent drying out.
To make the syrup mix all the ingredients together and cook for 10
minutes. Bitz in blender. Tip syrup over pancakes and serve.
