~ Recipe of the month

French Connection will from now on present a monthly recipe using only ingredients which are readily available in Placencia. French Connection's aim is to combine the classic French Methods of cooking with the fantastic Belizean produce that are available. Here is the first recipe for you to try at home! Enjoy!

Cauliflower, Potato and Coconut Soup

 

 

 

· In a non reactive saucepan, melt the butter, and add sliced onions, chopped garlic and chopped celery and cook with a pinch of salt and black pepper for 6 min, over a low heat. Add the chopped chillies, cumin, black pepper, turmeric, paprika, root ginger and ricard and cook for 2 min.

· Add potatoes and cook until potatoes start to stick to the bottom of the pan. Add the stock and continue to cook until the potatoes are tender. Add the cauliflower and coconut milk and cook for 12 min.

· Ladle the soup into a blender and liquidise until smooth. If too thick thin with extra stock or coconut milk.     Season to taste and garnish with cilantro.
